Here’s a great recipe from Pizza Luna at The Royal Haciendas that’s full of Italian flavors and perfect for alfresco dining this summer. We hope that you will join us soon to enjoy it in the Riviera Maya.


Pizza Rustica

For the pizza base

  • 200g pizza dough
  • 10g semolina flour
  • 70g tomato-based pizza sauce
  • 80g grated mozzarella cheese
  • 40g goat cheese
  • 60g serrano ham
  • 20g rocket
  • 15g black olives
  • 2g red pepper

For the pizza top

  • 200g pizza dough
  • 10g semolina flour
  • 35g tapenade

Roll out the pizza dough with a rolling pin or by hand, adding the semolina flour little by little to improve the dough’s elasticity.
Once you have a round disc spread it with the tomato pizza sauce.
Top with grated mozzarella cheese and goat cheese.
Sprinkle with the ham, sliced olives and rocket until the base is evenly covered.
Roll out the remaining pizza dough, place on top of the pizza and seal the edges with your fingertips.
Bake in the oven at 180C for 10 minutes, even better if you have a wood-burning pizza oven!
Spread the tapenade over the top of the pizza and serve with a salad and an Italian red wine.
