Our cool cocktail for this month is from Kinoko restaurant at The Royal Haciendas. It is perfect for an evening drink on the terrace this summer and be sure to order it on your next visit to the Riviera Maya.


Serves 1

  • 1 1/2 oz sake
  • 1 oz lychee juice
  • 2oz tonic water
  • ½ oz lime juice
  • ½ oz sugar syrup
  • ½ oz grenadine
  • ½ lychee for the garnish
  • Sprig of rosemary


Our lime juice, lychee juice, sugar syrup and sake in a cocktail shaker and add ice.

Serve on the rocks, add a dash of grenadine and tonic water. Garnish with the lychee and rosemary.
