There are zesty new salads to choose from too, including the El Conquistador salad of mixed lettuce, goat cheese, sun-dried tomatoes, almonds and toasted pine nuts with a red berry reduction, Caesar salad and Italian burrata cheese salad with cherry tomatoes, pesto and toasted hazelnuts. Roast baby beets are also served with frisee lettuce, grapefruit, cashews, goat cheese and honey, a delicious combination.

The French onion soup is an El Conquistador favorite and it is joined by a creamy clam chowder and the Chef’s soup of the day.

There is an exciting array of main courses to you to choose from showcasing the fresh seafood and prime steaks that are El Conquistador hallmarks. The crab cioppino is a hearty Mediterranean seafood casserole with white wine and marinara sauce. Continuing with seafood, there is a sous-vide fish fillet with meuniere sauce, tequila shrimp and grilled salmon with lemon and butter sauce. The fresh Caribbean lobster and marinated grilled octopus are a must.

Meat lovers will savor the sous-vide pork ribs in cider sauce, the herb-crusted rack of lamb cooked to perfection, pan-roasted chicken with herbs and the steak selection. Options include a flavorful filet mignon with brandy and black peppercorn sauce, tender rib eye and marrowbone, the all-time favorite chateaubriand and a huge tomahawk steak that is enough for two people. They are served with your choice mashed potato, mushroom risotto, aligot, creamed spinach, potatoes au gratin or grilled vegetables.

Order a bottle of wine from the wine list, the waiter will be happy to recommend pairings for your menu selection.

And be sure to save space for dessert. The selection includes flambéed bananas or cherries jubilee prepared tableside, heavenly chocolate cake, homemade ice cream and specialty coffees.

Master guitarist Jorge Duran will serenade you as you enjoy your meal. For 30 years he has been entertaining Royal Resorts diners with a repertoire of classic Spanish guitar, Mexican melodies, pop ballads and his own compositions.
