Royal Resorts Foundation supporting community causes

Here’s the latest news from the Royal Resorts Foundation and the work it is able to do to transform lives and protect the planet as a result of the generous support of Royal Resorts members, guests and employees.

 

Kitchen construction well underway at Don Bosco Youth Center
Building a kitchen at the Don Bosco Youth Center was the 2018 Royal Resorts Foundation Race cause and it is now taking shape. The teenagers attending the center will soon have access to the balanced and nutritious meals they need as they study for a better future.

Open School at Colegio Mano Amiga
Thanks to the donations of Royal Resorts members, guests and staff, the Royal Resorts Foundation is able to provide scholarships for an entire class of 35 children at Colegio Mano Amiga in the Ciudad de Alegria in Cancun. Royal Resorts Foundation representatives recently caught up with these second graders at their open school event before they broke up for the summer holiday.

Colegio Mano Amiga students come from poor families, often from single parent households, migrant families or vulnerable backgrounds sometimes overshadowed by domestic violence, health and other problems that would make it impossible for children to continue their studies if it were not for the support they receive from the Royal Resorts Foundation.

 

Collecting school materials
Royal Resorts employees have been collecting new and second-hand text books, art materials and other school kit to donate to children in disadvantaged communities on the outskirts of Cancun.

If you would like to donate educational material, children’s books in Spanish, new toys and clothing in good condition for children and adults, you may do so year round. The Royal Resorts Foundation will see that they get to those who need help the most.

 

Bottle tops can make a difference
Royal Resorts employees support an ongoing campaign to collect plastic bottle tops and put them to better use. In late July, 21 kilos of bottle tops collected at the resorts were delivered to Banco de Tapitas A.C., a Mexican charity that sells them for recycling and uses the proceeds to help children with cancer.

 

Protecting the environment
Did you know that one discarded cigarette stub pollutes approximately eight liters of sea water and up to 50 liters of fresh water? However, they can be reprocessed, mixed with recycled paper and sawdust and given a new use that reduces their impact on the environment. Royal Resorts cleaning staff participated in the First Colillaton campaign organized by the Cancun Ka´Yok´ Planetarium to raise awareness about the need to dispose of cigarette stubs correctly. They handed over 15 kilos of cigarette stubs picked up on the beaches or from ashtrays at the resorts from April to July.

Restaurant excellence, top marks for Grand Residences by Royal Resorts

For the second year running, the restaurant team at Grand Residences by Royal Resorts, our resort to the south of Puerto Morelos, has achieved a 100% score in Distintivo H inspections of the kitchens and food storage facilities.

Distintivo H is a seal of approval awarded by the Mexican Tourism Board and the Ministry of Health for excellence in food preparation and kitchen hygiene in resorts, restaurants and bars.

The restaurant kitchens at The Royal Cancun, The Royal Caribbean, The Royal Islander, The Royal Sands and The Royal Haciendas, Captain’s Cove, Pancho & Willy’s and Hacienda Sisal are also inspected every year as part of Distintivo H certification and pass with flying colors.

The Royal Resorts Family: Chef Oscar at Hacienda Sisal

An evening at Hacienda Sisal restaurant next to The Royal Sands in the Hotel Zone is a must if you want to dine on Mexican cuisine during your Cancun vacation. Hacienda Sisal is one of Cancun’s top Mexican restaurants and Chef Oscar Ortega is the man behind the traditional dishes on the menu. He tells us about his inspiration.

Originally from Cuernavaca in the state of Morelos, Oscar’s passion for preparing Mexican cuisine began when he was a child. “I have an aunt from Veracruz who always cooked Christmas dinner in my grandparents’ house when I was little,” he says. “I liked to help her, she was a really good cook and she taught me the secret of flavorings and the need to go back to our roots and use time-honored recipes passed down through the generations. I got my first job in a restaurant when I was 17 and still in Senior High School and I never looked back.

“I combined work with studying for a degree in Gastronomy and Restaurant Management at the UNILA University in Cuernavaca,” Oscar explains. “With my wages I was able to put myself through college and then take specialist courses at the Corbuse Gastronomic Institute in Mexican Cuisine, Cooking with Chocolate and Molecular Cuisine.

“I worked in Los Cabos for two years in hotels and a contemporary Mexican restaurant. I then returned to Cuernavaca with the idea of starting my own business but it didn’t happen and I decided to come to Cancun. I was working at a hotel in the Riviera Maya when I met Enrique Garcia, the former Royal Resorts Executive Chef. He convinced me to interview and I was hired to work in La Veranda restaurant at The Royal Sands.

“One of my college teachers was Juancho Sanchez, now one of Mexico’s top chefs, and I also worked with him in Cuernavaca. He invited me to join his team for the opening of a new restaurant in Polanco, Mexico City. In terms of professional development it was an amazing opportunity for a young chef and I was there for eight months before returning to Cancun. By that time I had fallen in love with the beaches of the Mexican Caribbean and decided that I wanted to make my home here.

“In December 2016, our Executive Sous Chef Juan Manuel Orozco invited me to return to Royal Resorts as the Chef at Hacienda Sisal and I jumped at the chance. My first love is Mexican cuisine and I felt as though I was coming home.

“My first project when I started at Hacienda Sisal was to change the dinner menu; we kept some of the favorites but added many new dishes from different parts of the country. The lunch menu came next and I am always introducing new dishes, sometimes as chef’s specials. We received great feedback about the menu, which is immensely satisfying. I often get called out by diners wanting to congratulate me. I recall one couple on a gourmet tour of Cancun, they told me that they couldn’t believe that someone so young could produce the delicious flavors and recipes that they remembered their grandmothers preparing when they were children. It feels really special and is a tremendous honor. I work hard every day, looking for new ways to improve and I want my team to feel as passionate as I do about our cuisine and dishes. I have nine staff working with me, five of who are women. It is the first time I have worked with so many women in the kitchen and they are fantastic, very hard working and conscientious with great attention to detail. I think we have a good team.

“I try to remember the recipes of my aunt and grandmother and try to incorporate their flavors and seasoning into my dishes,” Oscar explains, “I am from a village near Cuernavaca and I remember the smell and taste of tender corn cobs that are freshly harvested, fruit that you gather from the orchard and vegetables that still have the dew on them when you cut them. That’s what we should strive for.

“Mexican cuisine is one of the richest and most complex cuisines in the world and it didn’t surprise me when UNESCO included it on the World Heritage list for its sheer diversity,” Oscar says. “It comes from the days of our ancestors and has evolved incorporating new flavors and spices brought by settlers from Europe and the Middle East. Wherever you go in Mexico there are different native fruits, vegetables and herbs to try, for example, here in the Yucatan, there are tropical fruit I had never seen before like the huaya and nance. I like to experiment with them.

“What are my favorite dishes? Well the humble taco can actually be a masterpiece; you can be really inventive with the fillings and salsas and they will all be delicious. And I love cooking with pork, every joint tastes different and look at all the ways in which you can prepare it, everything from tacos al pastor to the Yucatan classic Cochinita Pibil, tender pork leg or suckling pig marinated in achiote and Seville orange juice and slow cooked in a pit. I recently did a special of duck carnitas, which proved very popular; grilled octopus, fish tacos and of course our most famous Independence dish, Chiles en Nogada from Puebla are others.

“When I was growing up there was a certain stigma attached to food preparation in Mexico. I’m happy to say that this is no longer the case, there is a lot more appreciation of how complex our traditional recipes are, the time-consuming techniques used and the ceremony and artistry that goes into their preparation. There is always something to learn.

“We Mexicans are a happy people and we transmit this to everything we do, including our cuisine,” Oscar adds. “We have a vast selection of fruit and vegetables to work with from temperate and tropical climes, seafood, poultry, beef, pork and lamb, cheeses, herbs and spices, all produced here. We have a sense of mischief, always trying things and experimenting with flavor combinations. Look at all the different varieties of mole sauces that exist; they are the result of mixing different spices, chili, chocolate and other ingredients and seeing what tasted the best. Our cuisine is not as formal as French cuisine, you can let your imagination run free. I am always smiling and joking in the kitchen and constantly trying new dishes, giving them to my team to sample, asking their opinion on the seasoning and whether they think there is anything missing.

“Just like our Oscar-winning film directors, a number of Mexican chefs now have their place on the world stage and are taking our cuisine to new heights.They include Patricia Quintana, Marta Chapa, Enrique Olvera, Aquiles Chavez and Benito Molina, among others,” explains Oscar. “I particularly admire Enrique Olvera, he has gone back to our roots and his dishes have the ancestral flavors I remember from childhood visits to see relatives in a Guerrero community where everything was cooked over a wood fire. Olvera sources all his ingredients locally and this is good for farmers, artisanal producers and for the rural economy. He makes his own tortillas from blue corn and his own mole spice mixes. He is passionate about our cuisine and Mexico.

“Here in Hacienda Sisal we make our own sauces and by popular request, we are now producing two of them for sale in The Royal Market. If you want to try some of my dishes at Hacienda Sisal, they include Chicharron de Res, Tortilla Soup, Marquesa-style Quesadilla, Pork Steak with Guajillo and Tamarind Sauce and Pescado a la Talla with rice. For dessert, don’t miss the Crème Brûlée with Mexican chocolate or the deconstructed Tres Leches Cake.

“Where do I find inspiration?” muses Oscar, “I find it in our flavors and also in the spectacular landscapes of Mexico. For example, here in the Mexican Caribbean, just look at the shades of blue and turquoise in the sea and when in central Mexico, the beauty of our mountains takes your breath away. I love visiting villages wherever I go, meeting the inhabitants and getting them to talk about the olden days. You learn so much and they will share family recipes with that special touch of flavor. It’s my passion and I put it into everything I do.

“We have many more projects here in Hacienda Sisal, for example we would like to start wine tasting dinners to showcase Mexican wines, tequilas and mezcals. The menus will continue to change, we’ll have more chef’s specials and we are making different artisanal ice creams with tropical fruit in season, spices and other ingredients. We also have our Pozole Thursday and a very popular Sunday Brunch buffet, both showcasing popular Mexican dishes.

“Do I have a message for our guests?” says Oscar, “Yes, I hope that they visit Hacienda Sisal and try our cuisine. To visitors who might think that Mexican cuisine is too spicy for them, I would tell them that it isn’t and that they should try it. There are many dishes that have smooth, sophisticated sauces that aren’t hot at all. Our chili sauces are served on the side and they can add as little or as much of them as they wish. We want them to leave Hacienda Sisal after having had an excellent meal and for them to return, over and over again.”

Have fun and keep fit on your Royal Resorts vacation

Have fun and keep fit during your Royal Resorts vacation. From tennis and beach volleyball to a morning swim in the lap pool, aqua aerobics and sail boating, there’s something for everyone. Work out at the resort gym, join a yoga or zumba session or go bike riding, it’s all here and for golfers, Royal Resorts members and guests even get special green fees at several local courses.

There are fitness centers at The Royal Sands, The Royal Caribbean, The Royal Cancun and The Royal Haciendas in the Riviera Maya. Daily and weekly rates are available and a multi-gym pass. Use of the fitness center is included in the REFINE All-Inclusive package. If you want something different, the Activity Centers also offer a full program of fitness sessions, games and sports. There’s yoga, zumba, pilates and aqua fitness in the morning and don’t miss the Latin dance classes. Join in the pool fun with a game of water polo and at 3 p.m. it’s time for beach volleyball!

Visit the Sports desk at your resort during your Royal Resorts vacation to book a tennis court and sign out rackets and balls. Ask about the singles, doubles and mixed doubles tournaments at the different resorts during the week. If you would like to book a class, clinic or game with the tennis Pro you can make a reservation with Sports desk staff. There are also full and half basketball courts at The Royal Sands, the Royal Cancun and The Royal Islander and a multi-use sports court at The Royal Haciendas.

The Sports desk also has snorkeling gear, basketballs and footballs, board games and more available for you to sign out.

If you want to get out on the waves, book a sailboat through the Sports desk at The Royal Cancun and go sailing on the bay with Isla Mujeres in the distance or in Nichupte Lagoon if you are staying at The Royal Sands, The Royal Caribbean or The Royal Islander. There’s a regatta every Friday morning at the Royal Marina beside Captain’s Cove restaurant. Sailboat classes are available if you have never been sailing before.

Guests staying at The Royal Cancun can also try their hand at kayaking and paddle boarding. The Activity Center organizes a weekly kayak tour of the lagoon and the mangrove forest for a glimpse of the local wildlife such as herons, kingfishers, iguanas and the occasional crocodile basking in the sun. Reservations are required for all these activities.

The Royal Haciendas in the Riviera Maya offers kayaks and you can sign up for snorkeling, kayak and bike tours at the Sports desk. Paddle boards may be rented from a concession on the beach.

Keen golfers can take advantage of special discounted green fees at several prestigious courses in the Cancun area and the Riviera Maya to get out on the fairway during their Royal Resorts vacation. The Royal Golf program offers members and guests discounted rates to play at Playa Mujeres, Puerto Cancun and Iberostar Cancun golf clubs in the Cancun area and at Iberostar Playa Paraiso and Grand Coral in the Riviera Maya.

Each of these courses offers a Royal Tournament day too so that you can pit your golfing skills against fellow Royal Resorts guests. The current schedule is Monday at Grand Coral, Tuesday at Playa Mujeres, Wednesday at Iberostar Cancun, Thursday at Iberostar Playa Paraiso and Friday at Puerto Cancun. A minimum of 12 players is required for the tournament to take place at the Iberostar Cancun and Iberostar Playa Paraiso courses. The Concierges can help with golf reservations, call ext. 172 or you can call the Golf & Restaurant Reservations Center at ext. 165.

If you didn’t bring your golf gear with you, the Sports desk has a limited supply of single golf clubs for sign out and you can also rent full golf bags from the Royal Market.

New Royal Resorts dining option, Mexican night at La Veranda

We have a new Royal Resorts dining option for you this summer, get ready to tuck into traditional dishes from all over Mexico! It’s Mexican Night in La Veranda at The Royal Sands in Cancun.

Listen to mellow marimba music performed by a group from Chiapas as you sip a margarita, tequila or mezcal or a glass of Mexican beer or wine and choose what you are going to eat.

Start with a generous helping of guacamole, chips and salsa or fresh seafood ceviche. There’s a full salad bar featuring Mexican specialties such as tasty salpicon, which is shredded beef with radishes, tomato, lettuce, cilantro and red onion or help yourself to chicken, lettuce, jicama and other vegetables. Try a classic market snack: esquites or cooked corn kernels topped with cream, cheese, chili powder and lime juice.

Assemble your plate of antojitos mexicanos or Mexican snacks for starters. These may include tacos al pastor, quesadillas, crispy deep-fried tacos dorados and sopes, which are corn dough patties with assorted toppings. Yucatecan snacks to try are salbutes and panuchos, corn tortillas topped with shredded chicken or turkey, lettuce, sliced avocado and pickled red onion.

Main courses on the buffet range from chicken in mole sauce, that smooth chocolate-chili spice mix that is a traditional specialty in Puebla and Oaxaca, to Veracruz-style fish or the catch of the day cooked in garlic butter or al mojo de ajo. There are beef and chicken brochettes, chicken tamales and carnitas or marinated roast pork. Try the beef barbacoa which is cooked for so long it literally melts in your mouth or cochinita pibil, pork marinated in achiote and Seville orange juice spice mix, wrapped in banana leaves and slow roasted. Served with warm homemade corn tortillas, pickled red onion and a dash of chili sauce, it is a showstopper dish from the Yucatecan kitchen.

Make your own tacos with corn or flour tortillas, diced beef or chicken, rajas con crema or poblano chili slices in a cream sauce, refried beans, Mexican rice and grilled spring onions. Vegetarian dishes include potatoes with chard, zucchini in tomato sauce and nopales, tender cooked cactus leaves.

Be sure to help yourself to some freshly made salsa. There are a variety of sauces to choose from, including pico de gallo, tasty cooked tomato salsa and avocado, green tomatillo, serrano chili and coriander-based sauces. For an extra kick, seasoned chili eaters can try xnipek, made with the fiery habanero chili from the Yucatan.

For a sweet ending to your Mexican meal, help yourself to some traditional desserts. They include candied papaya, fritters with cinnamon and piloncillo sugar sauce, caballeros pobres or Mexican-style French toast, crème caramel and tres leches or Mexican cream cake. Order Mexican-style coffee or hot chocolate with fragrant cinnamon and a glass of Xtabentun, the honey-anise liqueur made in the Yucatan.

The Monday night Mexican buffet at La Veranda in The Royal Sands is served from 5:30 to 10 p.m. and the marimba band plays from 6 to 9 p.m. The cost is $465 pesos per person, children half price. It is included in the REFINE All-Inclusive package.

A week of theme nights at La Veranda
There’s something for everyone at La Veranda during the week with an array of theme night buffets, an a la carte menu and chef’s specialties. Satisfy your craving for fajitas on Saturday night and enjoy island recipes on Sunday during Caribbean night. Monday night is Mexican night and on Tuesday you’ll savor fresh pasta, seafood and other Italian dishes. Wednesday night brings you the flavors of the Orient and Prime rib night on Thursday is a favorite with meat lovers. Finally, on Friday, don’t miss the poolside BBQ.

The new SOS After Sun Facial from the Babor line of luxury skincare from Germany, now available at the Spa, is the perfect remedy. It contains soothing chamomile, vitamin E, soya, sesame seed and peanut oils, aloe vera, wild indigo extract and kaolin. These active ingredients refresh and calm skin that is red, irritated or overheated after too much sun, providing instant relief. The gentle formula also makes it ideal for sensitive skin.

The mask is applied and then your face is completely covered in bandages for 60 minutes for maximum absorption. The SOS After Sun Facial does not include a steam treatment or extractions.

Top tips for beating the heat from the Royal Resorts Spa
• Wear a hat, sunglasses and have a t-shirt or cover up with you
• Apply eco-friendly sunscreen with the correct factor for your skin and repeat during the day
• Make sure that your children wear special kids sun lotion with a high SPF factor to protect them from burning, SPF 70 is recommended
• The hottest part of the day is between 11 a.m. and 3 p.m.
• Even if it is cloudy or breezy you can still burn
• Drink plenty of water throughout the day, at least two liters is recommended
• Don’t overdo your sunbathing! Cool off in the shade or in the water frequently
• Sun products should always be reapplied after bathing
• Use environmentally friendly sun products to protect marine life and coral reefs and shower before entering the water
• An even better idea is to wear a t-shirt as an alternative to sun cream if you plan to go snorkeling
• Wear cool cotton clothing in white, cream or pastel colors
• Snack on fresh fruit and vegetables to cool off
• Add some freshly squeezed lime, orange or grapefruit juice to your water or try some of the local tropical fruit drinks known as aguas de fruta o aguas frescas. Made with pineapple, orange, lime, mango, melon, guanabana or soursop, pitahaya (Dragon fruit) and guava you’ll find them very refreshing. Another cool drink to order is jamaica, which is a iced tea made with the dried petals of the hibiscus flower
• If you are in Cancún or Playa del Carmen indulge with some helado as ice cream is known in Mexico, you’ll find a variety of flavors and whichever one you choose, it’s sure to be delicious
• If you do burn, apply refreshing aloe vera gel to cool off or make an appointment at the Royal Resorts Spa for the SOS After Sun Facial
• Apply moisturizer in the evening after bathing to keep your skin soft. Slices of cucumber over the eyes will also help you cool off
• It is cooler on the coast due to the sea breeze so if you plan to visit the archaeological sites and colonial cities that lie inland in neighboring Yucatán, it is a good idea to go early when it is cooler. You’ll also beat the crowds.
