Sopa de Lima is a light chicken and vegetable broth that is perfumed with lima, a variety of aromatic sweet lime used in the area.<\/p>\n<p>This recipe makes a large amount of soup so you may need to reduce quantities proportionally.<\/p>\n<ul>\n<li>10 oz sliced green pepper<\/li>\n<li>7 \u00bd oz of sliced red pepper<\/li>\n<li>7 oz sliced onion<\/li>\n<li>9 \u00bd oz sliced celery<\/li>\n<li>5 \u00bd oz of lima<\/li>\n<li>7 oz chopped tomato<\/li>\n<li>3 bay leaves<\/li>\n<li>1 tsp salt &amp; pepper<\/li>\n<li>2 oz chicken stock powder<\/li>\n<li>\u00bd oz chopped garlic<\/li>\n<li>2 oz vegetable oil<\/li>\n<li>7 1\/2 oz chopped carrot<\/li>\n<li>1 gallon chicken stock<\/li>\n<\/ul>\n<p>Heat 2 oz of cooking oil, add onion and garlic and fry lightly, stirring from time to time to prevent burning. Add carrot, celery, tomato and bay leaves. Pour in chicken broth, lima juice and slices. Season to taste with chicken stock powder, salt and pepper.
