Here\u2019s a classic seafood recipe that has long been a favorite at El Conquistador Restaurant.<\/span><\/p>\n<p><strong>Portobello Mushroom Seafood Surprise<span style=\"font-weight: 400;\">\u2028<\/span><\/strong><\/p>\n<p><span style=\"font-weight: 400;\">Quantities are per person.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">50g cream<\/span><\/p>\n<p><span style=\"font-weight: 400;\">100g portobello mushroom (one per person)\u2028<\/span><\/p>\n<p><span style=\"font-weight: 400;\">55 g shrimp<\/span><\/p>\n<p><span style=\"font-weight: 400;\">41g scallop<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Diced lobster<\/span><\/p>\n<p><span style=\"font-weight: 400;\">30 g clarified butter<\/span><\/p>\n<p><span style=\"font-weight: 400;\">15g chopped white onion<\/span><\/p>\n<p><span style=\"font-weight: 400;\">22 g white mushrooms<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Salt &amp; pepper<\/span><\/p>\n<p><span style=\"font-weight: 400;\">10g ground almonds\u2028<\/span><\/p>\n<p><span style=\"font-weight: 400;\">3 teaspoons white wine\u2028<\/span><\/p>\n<p><span style=\"font-weight: 400;\">80g steamed spinach\u2028<\/span><\/p>\n<p><span style=\"font-weight: 400;\">20g cherry tomatoes\u2028<\/span><\/p>\n<p><span style=\"font-weight: 400;\">48g asparagus<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Clean the portobello mushrooms, slice in half and grill with a little butter, salt and pepper. Fry the onion in butter, add the shrimp, scallops, lobster and chopped mushrooms and saut\u00e9 until seafood is cooked. Add the croutons, ground almonds and white wine. Season to taste. \u2028Arrange the bed of spinach on a plate and top with a portobello mushroom half, add the seafood mixture and drizzle with cream, cover with the remaining mushroom half.
