If you have young children this is a great arts and crafts activity to enjoy with them, you can even ask them to draw pictures of their Mexican vacation to decorate the walls.<\/p>\n<p>Need some inspiration? How about some tasty grilled steak or shrimp tacos for dinner? You\u2019ll need tortilla chips, lashings of salsa and guacamole and here are some tasty recipes you might want to try.<\/p>\n<h3>Guacamole<\/h3>\n<p>The quantities listed here are given per person and if you plan to prepare this for several people you will need to increase them.<\/p>\n<ul>\n<li>1\u00bd avocados per person<\/li>\n<li>1 tbsp. chopped onion<\/li>\n<li>2 tbsp. chopped tomato<\/li>\n<li>1 tbsp. chopped fresh coriander<\/li>\n<li>\u00bc tsp. oregano (optional)<\/li>\n<li>\u00bd tsp. salt (according to taste)<\/li>\n<li>1 tsp. chopped chili serrano (add according to taste)<\/li>\n<li>Juice of half a lime<\/li>\n<li>3 oz. warm tortilla chips per person<\/li>\n<\/ul>\n<p>Scoop the avocado flesh into a bowl and remove the seeds. Use a potato masher or fork to mash the avocado or leave diced if you prefer your guacamole chunky. Add the onion and tomato, cilantro, spices, salt and finally the chili and lime juice. Serve with warmed tortilla chips.<\/p>\n<p><strong>Chef\u2019s Tips<\/strong><br \/>\n* If you do not want your guacamole to be too spicy, chop the chili and remove the seeds. Always wear gloves when working with chilies and remember not to touch your eyes and mouth with your hands. Use a separate knife and cutting board and wash them well.<br \/>\n* Adding a few drops of lime juice to your guacamole will stop the avocado going brown; leaving an avocado stone in the bowl until you are ready to serve will also do the trick.<br \/>\n* If the chili proves hotter than you anticipated and your lips and tongue start to burn, lick up some grains of salt for relief.<\/p>\n<h3>Frijoles Charros<\/h3>\n<p>Note that this recipe makes a large amount of Frijoles Charros so reduce the amounts proportionally!<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>140ml corn oil<\/li>\n<li>47g garlic<\/li>\n<li>141g sliced bacon<\/li>\n<li>340g chorizo sausage<\/li>\n<li>293g onion<\/li>\n<li>227g cooked smoked ham (leg)<\/li>\n<li>275g green bell pepper<\/li>\n<li>232g red bell pepper<\/li>\n<li>238g tomato<\/li>\n<li>34g cilantro (coriander)<\/li>\n<li>40g epazote (you should be able to get this at a store stocking Mexican herbs and spices)<\/li>\n<li>3.4kg of beans in their cooking liquid (frijoles bayos \u2013 bay beans, not the black or kidney beans)<\/li>\n<li>15g chicken stock cube<\/li>\n<li>15g salt<\/li>\n<li>3g freshly ground black pepper<\/li>\n<\/ul>\n<p>Chop the garlic, onion, bacon, chorizo, green and red bell peppers, tomatoes and pork.<br \/>\nHeat the oil in a pan and fry the garlic and onion, stirring constantly.<br \/>\nAdd the bacon, chorizo and fry until golden. Then add the bell peppers, tomato and ham and cook for five minutes. Add the beans and their cooking liquid. Add the chopped cilantro and epazote and simmer for a few minutes. Finally season with chicken stock powder, salt and pepper.<\/p>\n<h3>Rajas con Crema<\/h3>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>2 cups of chili poblano sliced and lightly sauteed until soft<\/li>\n<li>2 oz bar of butter<\/li>\n<li>1 cup of canned sweet corn kernels<\/li>\n<li>1 cup of cream<\/li>\n<li>1 cup of grated cheese (Chihuahua cheese is used in Mexico; you could substitute it with Monterey Jack or strong white Cheddar)<\/li>\n<\/ul>\n<p>Slice the chiles and remove the seeds and veins, the hottest parts of the chili. Always wear rubber gloves when working with chilies and avoid rubbing your eyes or mouth.<br \/>\nSaut\u00e9 the chili slices in the butter until soft.<br \/>\nDrain the sweet corn and stir into the chilies.<br \/>\nAdd the cream and grated cheese and stir until the cheese is melted. You can turn off the stove and put a lid on the frying pan, the cheese will melt.<br \/>\nYou can add chopped and saut\u00e9ed white onion if you wish.<br \/>\nServe with warm flour tortillas.<\/p>\n<p>&nbsp;<\/p>\n\n<style type=\"text\/css\" data-created_by=\"avia_inline_auto\" id=\"style-css-av-15khuzw-33e390cc5022cbc4d91029524be6162e\">\n.av_font_icon.av-15khuzw-33e390cc5022cbc4d91029524be6162e{\ncolor:#f96216;\nborder-color:#f96216;\n}\n.av_font_icon.av-15khuzw-33e390cc5022cbc4d91029524be6162e .av-icon-char{\nfont-size:40px;\nline-height:40px;\n}\n<\/style>\n<span  class=\"av_font_icon av-15khuzw-33e390cc5022cbc4d91029524be6162e avia_animate_when_visible av-icon-style- avia-icon-pos-left avia-icon-animate \"><span class='av-icon-char' aria-hidden='true' data-av_icon='' data-av_iconfont='fontello' ><\/span><\/span>\n<h2>Mexican beer, wine, tequila and more<\/h2>\n<p>And now to the drinks you are going to serve at your Mexican fiesta and dinner on September 15.
